Place biscuits and pretzels in a food processor and pulse until finely crumbed. Remove to a bowl and combine with the coconut and the melted butter, mixing well. Spoon between 6 serving glasses and chill.
Combine gelatine and water in a small heat proof dish and mix well. Place into the microwave for 20 seconds, remove and allow to cool.
Place cream cheese, cream and sugar in the bowl of an electric mixer and beat until smooth. Add the gelatine mixture, mixing in well. Fold in the caramel sauce and spoon between serving glasses, cover and chill for at least 1 hour.
For serving; Garnish with crushed peanuts, top the cheesecakes with some more pretzels additional caramel sauce and shaved coconut.
