1 hour freezing time required
Pre-heat oven to 180ºC and place 5 frozen cookies onto an oven tray lined with baking paper.
Bake for 12-15 minutes, allow to cool on tray for 5 minutes before transferring the cookies to a cooling rack to cool completely.
Scoop 2 heaped tablespoons of ice cream (60g) onto 5 of the cookies and top each one with another cookie.
Once cooled, break the cookies up into bite size pieces.
Mix the broken cookie pieces into the slightly softened ice cream then refreeze for a minimum of 1 hour and serve.
