Place chick peas in 3 cups of boiling water and simmer for approximately 45 minutes or until tender.
Meanwhile, place pumpkin on a lined baking tray. Coat with oil and roast at 180oC for 25 minutes or until golden.
Place roasted pumpkin, cooked chickpeas, tahini, lemon juice, ground cumin, garlic clove, oil and water in a food processor. Season to taste. Process until smooth and stir in or garnish with coriander
