In a frypan, heat oil and panfry onion for 3-4 minutes til softened
Add garlic and cook for a further minute. Add bacon and fry for 4-5 minutes. Add mushrooms and cook for another 2-3 minutes.
Add Cannellini beans, stir and heat though for 1 minute, then add cream. Stir to heat through but do not boil. Season to taste with salt & pepper and turn off heat.
In the meantime, cook gnocchi in a pot of boiling water as per on pack directions. Drain and then add to the sauce and stir til gnocchi are well coated.
Serve and sprinkle with parmesan cheese and parsley (if desired).
