Sieve flour, McKenzie's Rice Flour, sugar and salt into a bowl.
Rub butter and knead until smooth dough forms.
Turn onto floured board, roll dough to 5mm thickness between two sheets of baking paper.
Using Christmas shape cutters, cut dough into desired shape. Place shape on cold greased tray. With smaller cutters, cut out a centre pattern for stained glass.
Bake in a slow oven (150 fan forced) for 40 minutes, until pale brown.
Remove biscuits from oven. Spoon crushed lollies into the centre pattern, place in oven for a further 5 minutes or until lollies have melted. Allow to cool on tray before removing.
TIP: Before baking, make a small ribbon hole in the top of each biscuit using a skewer. Once baked, tie the biscuit with a ribbon and hang on your Christmas tree or include in your Christmas hamper gift.
TIP: To create jam filled shortbreads, create a smaller centre pattern on only half of the biscuit shapes whilst leaving the remaining biscuits whole. Once baked, spread jam (that has been warmed to soften) on the whole biscuit shape and then top with the windowed biscuit shape. Dust with icing sugar.
