Chick Pea Salad in a Jar

Step 1

Prepare chick peas and quinoa according to packet directions.

Step 2

Whisk olive oil, lemon and lemon in a small bowl. Season and then transfer to the bottom of the jar. Layer chick peas on dressing.

Step 3

Layer tomatoes, then cucumber, red pepper, quinoa and crumbled feta.

Step 4

Secure lid on tightly until ready to eat. Shake the salad just before eating.
