Different flavour combinations for this dish are limited only by your imagination!
Preheat oven to 175C.
Place barley and 3 cups of water into a saucepan and bring to the boil. Simmer for approximately 35 minutes until tender. Drain.
Add apples, sugar, lemon juice and cinnamon to barley.
Pour into lightly greased 5 cup capacity ovenproof dish.
Dot with butter, cover with foil and bake for 1 hour.
Serve with cream or vanilla ice-cream.
Tips: Different flavour combinations for this dish are limited only by your imagination. Try apple/rhubarb, peach/apricot, stewed quince/strawberry, mixed berry. Juse use 2 1/2 cups of your fruit choice. The cinnamon can also be substituted for other flavours such as ground ginger or vanilla extract.
